【Ingredients】
3 pieces of fish maw (soaked and blanched), 2 chicken thighs with back, 100g yellow pumpkin, 8 dried mushrooms, 3 red dates, 3-4 slices of ginger, 4 dried scallops, appropriate amount of wolfberry, Appropriate amount of water, a little rice wine, and a little salt.
【Steps】
- Soak the shiitake mushrooms in water.
- Cut the fish maw into small pieces for later use.
- Chop the chicken thighs from the joints and set aside.
- Put the pumpkin in the steamer and steam for about 8 minutes, then put it in the juicer and puree it for later use.
- Put the chicken thighs into boiling water and blanch for about 1 minute, then set aside.
- Take a stew pot, put chicken thighs, mushrooms, fish maw, red dates, ginger slices, scallops, etc. into the pot in sequence, add water until the ingredients are covered. (You can also add a small amount of rice wine to remove the fishy smell)
- Cover the pot and bring to a boil over high heat, then turn to medium heat, open the lid and simmer for about 1-2 hours.
- Before serving, add pumpkin puree in small quantities to make a golden soup. And add wolfberry to add color.
- Finally, add salt according to your own preference
